THE HARVEST
The olives of Casa D'Ambra's olive oil are harvested between October and December from olive trees of an average age of 50 years. The varieties are Leccina, Frantoio, Ravece and grow on the Montecorvo estate. From here, the olives are then transported to the oil mill and processed with the method of semi-integral pressing, cold extracted, so as to ensure a extra virgin olive oil of superior category, obtained directly from olives and only by mechanical procedures
(EC Reg. 1019-2002).
MILLING
The milling process is carried out at the Ferraro oil mill in Vico Equense, using an integral cold extraction system.
