SOIL CHARACTERISTICS
Particular geosit of the island. The agrarian soil is developed on detrital deposits formed by the altered green tuff and argillified. The soil, rich in potassium, is influenced by rising hydrothermal heat.

ORGANOLEPTIC NOTES
Deep ruby red color that refines with years into orange hues.

Dry but soft, full, harmonious; consistent and aristocratic.

Rib of beef; mixed grill, game; buffalo cheek with milk potato and reduction of the same wine (chef Nino Di Costanzo).
